Peak Espresso is the realization of a long-time goal for proprietor Elizabeth Rodrigs. Located in the space formerly known as The Way Coffee in the Lifts West Condominium building at 201 W Main, Unit 4, it is the type of operation that the trained chef, barista and owner of the Dairy Bar at 417 E. Main was looking for when she moved to Red River six years ago.
As the name indicates, the shop offers espresso and coffee drinks, along with a variety of fresh home-baked pastries from Elizabeth’s own kitchen.
Elizabeth says that her mission statement involves elevating the coffee community in Red River for locals and tourists, bringing people together over coffee and tea.
“It’s a social thing for locals and for visitors who want to be part of the Red River community. Pastry and coffee have always been in the plan.”
The shop is large, with plenty of room for expansion, Eventually there will be couches and comfortable chairs where people can gather and socialize.
A graduate of the Culinary School of Fort Worth and a certified barista from the Dallas Coffee School, she purchased The Way Coffee business from the Torres family. They heard that she was looking so they got together and “everything fell in place.”
She has owned the Dairy Bar since July 2017.
